Wheat-free and vegan!
2-1/2 cups oat flour
2-1/2 tsp. baking powder
1/2 tsp. baking soda
1-1/2 tsp. cinnamon
1/4 tsp. ginger
1/8 tsp. nutmeg
a pinch of cloves
1/4 tsp. salt
1 ripe banana
1-1/2 cups pumpkin puree
2 tsp. vanilla
1/4 cup olive oil
1/4 cup maple syrup
1/4 cup almond milk
100-125 grams (size of most chocolate bars) of vegan dark chocolate chopped
Combine flour, soda, powder, and spices in a bowl and set aside.
Mash banana in another larger bowl and mix in pumpkin and rest of wet ingredients. Add dry mixture to wet and whisk until just combined. Fold in 2/3 of chocolate and put int a greased 8 x 11” pan. Sprinkle rest of chocolate over top.
Bake at 350 approx. 25 minutes.
