The recipe featured at our booth at the Theatre Festival Street Fair!
Ingredients:
1 cup pecans (not soaked)
1/2 cup dates (measure after removing pits) – If dates are very dry, then pre-soak in water.
1/4 tsp. sea salt
4 Tbsp. raw cacao powder
2 Tbsp. (or more if making them smaller) shredded unsweetened coconut
Process pecans in food processor. Add dates, salt, and cacao to pecans in food processor. Process until mixture is smooth and able to clump together when squeezed.
Put shredded coconut in a small bowl. Roll processed mixture into balls.
Store in fridge for several weeks or in freezer for a month.
